Slow Cooker Beef Stew
This is an adaptation of a family recipe that I grew up with.
It is made with tomatoes, potatoes, garlic along with other seasoning’s and vegetables.The herb mix is what gives this slow cooker recipe that “Italian Taste” and will impress family and friends.
1 ½ kg (3 lb) lean dices (25mm 1 inch) cubes of Sirloin Beef Bolar or Topside roast (trim any visible fat)
400g (16oz) Italian (Roma) tomatoes skined and diced
1 cup beef stock (broth) 1/2 and 1/2 beef stock and red wine
1 medium onion, chopped
1 cup diced celery
2 large carrots, peeled and chopped into chunky pieces
2 medium sweet potatoes, peeled and cut into bite-size chunks
2-3 cloves garlic, peeled and crushed
2 bay leafs
1 tsp dry oregano
½ tsp dry rosemary
1 tsp dry thyme
1/2 tsp ground black pepper
salt to taste if desired after cooking
Add beef cubes and other ingredients except the tomatoes and herbs into your slow cooker bowl. Top with canned tomato and herbs, stir and cook on low 8-10 hours or until tender. Remove bay leaf before serving.
I serve either in a bowl with fresh breads (Gluten free if required) or plated with seasonal fresh greens.

Put this in the slow cooker late yesterday afternoon, had to go out for a few hours and when I got home at 8.30 I was greeted with that amazing aroma

Curious if you add any water to the crockpot or beef broth?? Or if not, where does the liquid come from so that it doesn’t cook down? Thanks!!

Sounds delish – what if you don’t have a crockpot? What temp/cooking time for an oven?

Cook in a covered casserole dish in the oven for 2-3 hours at 160-165 deg C

Hi there Jimmy i was wandering whether you would get the same flavours with fresh herbs instead as i have allof these growing, oh do you necessarily need to brown the meat or can you just throw it in the crockpot,on my menu this week, yum!
Hi Sarah, Fresh herbs will be fine. For fresh herbs use 3 times the amounts of the dried ones
The blurb says onion soup mix but it’s not in your recipe?? I love the look of this, must try it asap!
